Snooze, an A.M. Eatery opened its first Springs location at 7587 N. Academy Blvd. on April 24, following a soft opening weekend that raised $17,549 to benefit the Catamount Institute, The Home Front Cares and Colorado Springs Food Rescue.
“We want to make sure people feel like we’re really joining communities instead of just opening a business,” says Christopher Xavier, general manager at Snooze-Colorado Springs.
Snooze also prides itself on its intentional sourcing practices, (e.g., partnering with local milk purveyor Royal Crest Dairy), which Xavier says is “different than the Denver market, as we want to be as thoughtful and sustainable as possible.”
Guests can expect a morning-focused menu that highlights over half-a-dozen different egg Benedicts, a hearty breakfast pot pie, popular pancake flights and boozy cocktails from the barista bar.
“We at Snooze put creative twists on your breakfast faves,” says Xavier. “We’re not just your average breakfast spot.”
Go Fish Food Truck made its debut on April 10 at the 719 Hump Day Food Truck Rally at 2165 Academy Place with a quick, concise and well-received seafood concept.
“We wanted to create something new and different in town and there wasn’t an abundance of places where we could get seafood fast,” says Christina Voreadis, marketing and event coordinator for Go Fish Food Truck.
Go Fish opts to “keep it simple,” with just four menu items, including fish tacos, Cajun fried shrimp tacos, a shrimp poboy served on a French baguette from The French Kitchen, and wild-caught Pacific cod for their fish and chips, which owner, Kevin Hill, says offers a “light, crisp batter that’s nice and fluffy,” and integrates “a lot of citrus” and beer from their host brewery.
Go Fish Food Truck makes regular appearances at Lost Friend Brewing Company on Wednesday nights and rotates “Seafood Saturdays” every other week with Chef Bob’s Lobstah Trap at Nano 108 Brewing Company.
