On Thursday, March 9, chef Mark Henry will give customers a one-night-only sneak peak of his Rooster’s House of Ramen by opening a pop-up restaurant at Distillery 291 in partnership with Rocky Mountain Food Report. Philip Rawleigh, brand manager at 291, will be pairing specialty cocktails with select appetizers and ramen bowls from 6 to 10 p.m. or until the broth runs dry. “The cool thing about this is that the Springs has seen a lot of pop-up dinners but not a pop-up restaurant,” says Henry. “This is a way for Rooster’s to preview to our customers while also partnering with someone who has been a big part of my career, Michael Myers and Philip Rawleigh at 291. And we’re showing two great products together.”
Henry will be showcasing his signature ramen bowl the “Rippin’ Rooster” with kimchi braised chicken and Gochujang dashi, a fermented Korean pepper paste.
“I’m stoked to be able to collaborate with chef Mark Henry again,” says Rawleigh. “We are both passionate about good food and cocktails done simple and correct. When we can combine two amazing things like ramen and whiskey, it’s hands down already going to be an amazing night.”
Rawleigh will be pouring some East-meets-West cocktails. The Ginger Jade Punch with cilantro to cleanse the palate, a spiced Old Fashioned, and an Oh Snap! made with sugar snap pea simple syrup.
