Welcome to a complete overhaul of the cocktail menu at the Principal’s Office. Sixteen new cocktails are making their debut, “probably the most collaborative menu we have done so far” says PO’s Eric Harry Nicol, noting seven bartenders contributed recipes.
“The inspiration was warming, spice, and booze forward,” Nicol says in an email to the Report. “We used a lot of aperitifs, cordials, and digestifs in this menu.”
Two of Nicol’s favorites are the Smoky Artichoke, and the Making Love by the Fire.
“[The Smoky Artichoke] uses cynar as a base liqueur, it has 13 botanicals, 1 including artichoke,” he says. “Mezcal is used as a modifier which adds the smokiness.
“Making Love by the Fire: It’s a warm drink that makes you feel just like the name says. It is a 100% liqueur base beverage. Zucca is a rhubarb based liqueur, Nonino is a bitter sweet amaro, and creme de cassis is a currant liqueur.”
